What's Cooking?

I used to love doing flap jacks at pancake breakfasts. The bagels I make a scrambled is egg (not broken up) toast the bread, slp on two pieces of bacon and top with cheese which melts because it is all hot. I use a fresh egg from my ladies.
Happy breakfast food.

Tonight is vegie soup, yum. Home made of course.
Home laid eggs are the best! I used to get them from my mom down in OC but then something got into the coop and my mom still hasn’t recovered.

Will shout out Homeboy Industries here. They do really have the best coffee cake in LA!
If you haven’t had the chilaquiles at Home Girl cafe, idk if you’ve ever had chilaquiles….

If you’re struggling looking for a gift, this is the best Christmas gift I’ve gotten since my yeti cooler.

It's not cooking, but more a PSA.
Spousal unit brought home some Holiday Blend Starbucks pods. I'm assuming the store was giving them away....
Decided to give it a try. It turned out to be the worst coffee I have ever had. I had to rinse my mouth out with duck pond water, which tasted better.
Do yourself a favor and don't go near that stuff.
That is all.

Starbucks is not very good coffee anyways. Burned and very acidic. Now you do mention pods, so guessing K-Cup which are nasty to begin with, so the double wammy! I was gifted a Keurig machine a few years ago, after a couple months of trying to find something I would drink finally just gave it away, glad I found someone that wanted it cause it was destined of the trash. Duck pond water, now that sounds like something worth trying!

Time to fix the Jura......

I use Starbucks beans all the time. Mostly Sumatra (and Sumatra Decaf) but often Verona and Italian. All are exceptional - but I can control the grind, the proportions and how it's brewed. I cannot drink the Starbucks brewed coffee that they brew in the shop. Nasty, bitter, burned shite!

A couple of years ago I bought a bad of SB Holiday beans at Costco. I generally hate SB, but it had a coupon so I decided to try it. It was SUPER good. One of the best coffees I have ever had. I tried it again last year and it was absolute shiite. Went against my best judgement and tried it again this year. Shiite again.
Never again. Back to Peet’s.

I'm a fan of the Trader Joes "Wintry Blend"

Pre-Thanksgiving was my Mother-in_Law's 81st birthday. Had her, my Father-in-Law, my Sister-in-Law and her husband visiting for the celebration. Made a Chile-Rubbed Beef Tenderloin, Risotto with Butternut Squash, and a Salad with Arugula, Radicchio, Radishes, etc, with a nice homemade dressing. All went over very well. I have made this beef tenderloin recipe in the past. Simple preparation for the most part. The garlic-herb oil adds a nice finish to it. First time making this particular risotto and salad, and both were very good. As with all risottos, you really have to babysit them during the cooking process, but they're otherwise quite simple. Couple pics, one of which is mainly my plate with the end piece and a center piece of beef for comparison. Highly recommend this recipe for the beef tenderloin. Only issue is the sticker shock when you order four pounds of beef tenderloin, trimmed and tied from your butcher. Going rate is about $38 per pound! Still better and cheaper than what you would pay in a high-end restaurant for a similarly prepared meal. Sear the beef well in some sort of cast iron pot before chucking it in the oven, cut as needed to fit whatever pot you have to work with, and use an instant-read thermometer to check temp along the way. Rest well before serving.
