What's Cooking?

Wifey was visiting her sister this weekend. She had to pass thru Bakersfield and stopped by Salty's BBQ on her way home. It was killer. I've seen it on Diners Drive-ins and Dives have and wanted to try it for quite a while.:thumbsup:

That place is 2-3 miles from my house and I’ve never been there. Heard it’s good, there is a place here called Porkchop & Bubba’s and hear that this place is better than Salty’s.
 
12 hour Kalua pork for the game. Cook it overnight in the oven. Easy grubbing the next day. Really one of the easiest recipes. The dogs love it too.

two deep throw away foil pans (doubled for strength)
1 bone in pork butt
alaea sea salt
liquid smoke

Wear gloves or your hands will stink from the smoke.
Sprinkle 2 or 3 tbsp smoke over roast
Sprinkle sea salt generously all over
place in foil pan.
You can wrap it in banana leaves. I normally just add the peel from a banana.
I add a few garlic gloves too (not traditional)
Cover the pan tightly in a double layer of foil.
Bake at 200° for 12 hours.
Toss the peel and cloves. Strip the Y bone, fat and any connective tissue, and de-fat the pot liquor.
Meat and liquor in a crock pot. Serve with steamed rice, Mac salad, pineapple, and a green cabbagy vegetable (bok Choi?)

Extra meaty pork ribs, seasoned with mesquite rub, garlic pepper, seasoned salt, and mojo criollo around, not on, to keep from drying out. 275 degrees for 3 hrs 10 min. Add bbq sauce, broil on high for 8 min. Et voila! (Almost didn't get a pic, this was left.). Fall off the bone tender. I'm sated.

I have long considered it a mortal sin, not just venial, to pollute beef with anything other than seasoned salt and garlic pepper. Maybe some mesquite rub, depending on cut. However, in the interest of keeping an open mind, and that tri-tip steaks tend to get a little chewy with my usual treatment, I have decided to try a marinade this time. Olive oil, Worcestershire sauce, soy sauce, fresh-squoze lemon juice, thyme, rosemary, oregano, seasoned salt, other stuff....They will go on the barbeque in about an hour and half.

And to pair we have sweet potatoes (there will be many more, but I'm still cutting). A touch of pepper and nothing else added to them, baked for about 25 minutes.

Last night, baked pistrami sandwiches, pepper jack cheese, mayo, pickles, on a sourdough loaf, with baked sweet potato fries.
Tonight baked tritip with baked brocolli, cauliflower, carrots, small spuds.
Now. 7 trays (5#) of beef jerkey.
That will teach the Spousal Unit to go out of town.. . . .
 
Microwave? Haven't had one in maybe 15 years. Realized when the last broke didn't actually need it.

But do have an air fryer now, so there is that.

Edit: just realized I recall when microwave ovens were a new and novel product. Sh!t, I'm getting old.

Horses for corses.. microwave is terrible at most things but it can be great for some.

While most microwave popcorn that comes in packets is terrible for you and not all that great in the quality department, this contraption has proven itself. Bought a pair of these for my kids since almost every weekend ends up with some popcorn time. All you do is add the kernels, which is way less than I thought, and plop the lid on loosely, push the popcorn button, remove once there is a couple seconds between pops, add seasoning.. done.

Best popcorn I’ve ever had (the Ballpark Butter Seasoning with melted ghee helps).

I had a microwave for 26 years that recently stopped working . I went about 5 days without while my new one was on the way, and I was hating life. :Roflmao I mean, actually boiling water on the stove? GTFO. :Roflmao

I bought an air fryer a couple of years ago and really liked it as far as the cooking went, but I truly hated cleaning it, so stopped using it about 6 months ago. I just got a recall notice on it, and now they are going to send me a new one which I will promptly sell.

That’s why I never got an air fryer, cleaning seemed a hassle after talking to others.

We had to replace our toaster oven last year which we use pretty much daily for the kids. After some looking I landed on a Ninja Flip toaster oven that has an air fryer mode but easy to clean. We use the bake/toast/broil modes most but the air fryer mode is nice to have. So far we’ve been stoked on it but before kids we didn’t use a toaster oven much if at all.

To clean you just pull the rack out and a plate on the bottom, wash those, wipe down inside. It comes with a regular wire rack, fry basket and sear plate.

(Whoa, it’s $100 more than it was when I bought it less than a year ago!)

It's actually an air fryer toaster oven combo Cuisinart thingy I got at Costco to replace a 20 yo toaster oven. Doesn't need much cleaning and makes baked potatoes and makes toast easy peasy.

A stand alone air fryer.... My counter space it at a premium so couldn't justify that.

I may need to order one of these. I am a popcornaholic. Any recommendations on seasonings?

The giant cosori one? We’re getting a new one too.
To avoid a lot of cleaning we get air fryer liners. Bonus points, they’re compostable. So, we just throw the used oily liners in with the yard scraps.
