What's Cooking?

As promised:

Browning them up. I love that my skillet is a Griswold brand. From Erie PA. Go Clark!

We are not exactly a fast food family, but I did feel slightly guilty when it was brought to my attention the other day that the kid has made it to almost 10 years old without ever having stepped foot inside In-N-Out, much less having eaten one of their cheeseburgers. She enjoyed it so much you’d think she’d just spent 5 days crossing the desert without food.

That's awesome!

I still recall the day when one of the earlier In-N-Out's was built on top of a great little pump&jump track that I had built on an empty lot just a block away from where I grew up. Man, I was PISSED!

At 11:30 a.m.: 2 more hours...

24 lb pork leg, seasoned Cuban style. In the oven at 2 a.m. @275F. First and last half hour at 425F. Mwah!!!

We had pernil too. Something special about a fresh uncured/unsmoked ham. Ours was 17. Two day marinate. The cracklings were amazing!

ps - they were raving about this on the Rogan podcast, so I asked for some for Xmas.
I don’t normally have cream or sugar, but if you can handle the turmeric, it’s pretty great.

We had Beyond Burgers purchased from Costco tonight, and wow, they were AMAZING! Side by side with the Trader Joe's version, and those were just okay. They BBs cooked up, browned, charred, and were simply fantastic. Recommended! We've had the Beyond Tacos from Del Taco... those are meh at best.

Beyond meat is damn good! Processed as hell but good. my wife and kid who love meat will take a BB burger over the real thing!
