Try this.

In a 9x13 casserole, or smaller if you have fewer people; larger if more. Preheat oven to 425 F

Ingredients:
Salmon filet, skin on (I use a 1.25 - 1.4 lb filet for three people)
Mojo Criollo
Mrs Dash
Cumin
Garlic Pepper

Preparation:
Foil, shiny side up (toward fish), to line the pan.
Fish in the pan, skin down
Mojo Criollo about .5 inches deep
Season with the noted spices, or your choice, to taste
Cover with foil, shiny side down (toward fish)

Bake for 35 minutes, uncover, return to oven for 10-15 minutes for visuals.

For those who have never heard of Mojo Criollo, it's a Spanish marinade; I use it on chicken, fish and pork but not beef. See below.

Thanks bud, going to have to try this. Mountain bikes, good eats and cold beer always get my attention. Problem is I only know how to cook on a bbq so I'll have to leave the wife in charge of this recipe...
 
Oh, I have the BBQ version also. The trick is to use mesquite charcoal, and not make it too hot (if you cook with propane, why? might as well use the oven.) Again, skin on is important. Brush the skin with a bit of olive oil to keep it from sticking to the grill. Sear for about 60 seconds to start, skin side down, then, using TWO spatulas, turn and sear for 60 seconds skin side up. After that, turn every 7 minutes. Times are about the same, depending on the pile of briquettes you use.

Grill it. It's amazing. Just make sure you watch it closely, and have your sides ready to go when the fish is done.
